Well rasmalai, as we all know, consists of yellow-coloured (flattened) balls of chhena (a variety of Indian cottage cheese) soaked in malai (clotted cream) flavoured with cardamom. It is cooked in sugar syrup and milk with saffron, pistachios and kheer as stuffing.
It is a common sweet in India. It is served in parties, festivals, get togethers etc.
Today we will make a fusion recipe using rasmalai. Yes!
We will make Rasmalai Coconut Ladoos (Rasmalai Coconut Truffles).
First of all, these taste great and get ready in 30 minutes sharp.

How to make this recipe?
So, firstly we will make a paste using rasmalai, rasmalai milk and condensed milk. For this, all you have to do is – Add all the ingredients into a blender jar and blend these ingredients till a smooth paste is formed.
Next step is to roast the desiccated coconut lightly. So, we will take a medium sized pan. I have roasted the desiccated coconut using ghee (Clarified butter). You can also use vegetable oil.
After the desiccated coconut has cooked slightly, we will add the prepared paste. Mix nicely. Keeping the flame low, we will cook this mixture for about five to six minutes.
After the mixture is ready, we will take it out and allow it cool down . Later on, we will make small ladoos/balls using this mixture.
Then we will spread some powdered coconut on a plate and will roll these ladoos (balls) on the powdered coconut.
If you want you can place these rasmalai coconut ladoos/ rasmalai coconut balls in fridge for sometime or you can serve these straight away.

Ingredients
- 1 Cup + 4 Tablespoon desiccated coconut
- 1/2 Cup Condensed milk
- 4 piece Rasmalai
- 4 tablespoon Rasmalai milk
- 2 tablespoon ghee
Instructions

In a mixer jar, add rasmalai, rasmalai milk and condensed milk. Blend it till it forms a smooth paste.

In a pan, add ghee. Heat it and add dessicated coconut. On a low heat, saute this for 2-4 minutes or till you get a nice aroma of coconut.

Now add the prepared paste.

On a low heat, mix this. Cook this for 5 minutes. Stir in between so that the mixture doesn’t stick to the bottom.

Now take out this mixture spread it on a plate.

Let it cool.

Now make small ladoos (balls/truffles) using this mixture.

Spread some powdered coconut on a plate. Roll these ladoos (balls) on the powdered coconut.
