Eggless Semolina Nan khatai Recipe: An Indian cookie that has a melt in mouth texture. Prepared using only a handful of ingredients, nan khatai is one of the most popular Indian cookies.

Nan khatai an Indian Cookie cum biscuit. They are little crunchy and taste so nice. They get ready in a few minutes and is thus an easy recipe to make. You can keep them in an air tight container and can have them along with tea or just when you feel hungry.
Nan Khatai is made using flour, semolina, maize flour, ghee (clarified butter) and sugar. Thus it is an easy recipe. You do not have to go to the market especially for buying ingredients for this recipe. Also, it gets prepared in so less time that you can literally make it at any time.
I have used ghee(clarified butter) in this recipe. You can also use butter in this recipe. I once tried making this semolina nan khatai with oil, but the final nan khatais were not up to the mark.
That’s why I will recommend using wither ghee(clarified butter) or butter.

For making the nan khatais we will first take ghee and sugar in a mixing bowl. It would be better to use powdered sugar. For this simply add the granulated sugar into a blender jar and powder it. powdered sugar gets mixed well with ghee (or butter) and therefore helps in giving the semolina nan khatais a proper taste.

Whip the ghee (or butter) and sugar mixture for at least two minutes or till a creamy mixture is formed. You can either whip them using a hand mixer or a hand mixer. You can also whip this mixture using a hand whisk or a spatula. But remember to whip this mixture for an additional one minute. If you are using a hand whisk or a spatula.

Now we will add the try ingredients into this mixture. The dry ingredients include maida(all purpose flour), rawa(sooji or semolina) and makkai ka atta (maize flour).
We will mix all the ingredients together till a smooth dough is formed.
We will now make small balls from the dough. Flatten the balls a little bit. We will then make a small cut on their top with the help of a knife. If you want you can decorate these with some chopped almonds(as I have done).
You will bake these semolina nan khatais at 180C/350F for approximately 15 minutes.
These cookies are perfect for tea time. Serve these along with tea or coffee and everyone would definitely enjoy these cookies.

- 1/2 cup Maida (All Purpose Flour )
- 6 tablspoon Makai ka aata (Maize Flour )
- 2 tablespoons Sooji (Semolina )
- 1/2 cup Sugar (Powdered)
- 1/2 cup Ghee (Clarified Butter )

Preheat the oven to 180 C / 350 F.

Take ghee and sugar in a bowl. Mix them properly till the sugar gets properly dissolved in the ghee. You can either mix them using a hand mixer or simply with a spatula.

Seive maida, makai ka aata and sooji.

Add this seived mixture into the wet mixture ( ghee and sugar).

Mix them properly till it forms a dough.

Make small balls from the dough

Press these balls a little. Make a small cut on their top using a knife.

Put these on a greased baking tray.

Bake them for approximately 15 minutes at 180 C / 350 F.

After they have baked, keep them aside till they get cooled properly. When you will take them out, they might be a little soft in texture. Allow them to cool for a few minutes and you will get the proper original taste.
